Our Tomato Sauce

There’s nothing quite like a bowl of pasta with tomato sauce to warm you up on a chilly winter day.  Our house tomato sauce is full of fresh herbs and spices to add a great depth of flavor, and not cooked for too long in order to keep the tomato flavor fresh and bright.  So, whip up a big batch so you always have some on hand for an easy and comforting meal.  Enjoy!

Recipe

  • 1 #10 Can of Tomatoes
  • 1/2 cup Scallions (Chopped)
  • 1/2 cup White Onion (Diced)
  • 1/2 cup Fresh Whole Oregano Leaves
  • 1/2 cup Torn Basil Leaves
  • 1/2 cup Roasted Garlic
  • 1/2 cup Garlic Oil
  • 1 1/2 cups Grated Pecorino Romano
  • 2 tbsp Black Pepper
  • 1 tbsp Salt
  • 1 tbsp Red Pepper Flakes

Heat a large pot over medium heat.  Add all of the ingredients except the tomatoes and cook until the onions soften and turn translucent.  In a separate bowl, pour out the canned tomatoes, crushing some with your hands or blending some with a stick blender if you have one.  Stir in the cheese and cooked onions & herbs.  Use with your favorite pasta, pizza, or anything else you can think of!
